Low sodium pulled pork tacos

Here's another simple low sodium meal you can make using slow cooker pulled pork.


Servings: 1 taco

Sodium: 38 mg per taco

Time: If you've made your pulled pork overnight, it takes just 15 minutes to put together this taco.


Ingredients:

1 corn tortilla

2 ounces low sodium pulled pork

roasted tomatillo salsa, chopped onions, chopped cilantro, and lime to taste


Toast tortilla, pile on all the ingredients, and enjoy! Sometimes I also like to add a dollop of sour cream and some salt free chili pepper sauce, both of which will add very little sodium to your meal.


Most corn tortillas are low sodium (5-10 mg of sodium per tortilla). I use La Fe corn tortillas which have 0 sodium and are a little thicker than most brands.
