Low sodium pulled pork chopped salad

Salads are deceivingly high in sodium but this one is crunchy and filling at just 66 mg of sodium per entree sized serving.

Servings: 2 entree salads Sodium: 66 mg per salad Time: 30 minutes (assuming the pork has been made in advance)


Ingredients:

4 cups chopped greens

1/2 cup chopped cilantro

1/2 cup radishes, sliced thin

1/2 cup diced red onions

1/2 cup cherry tomatoes, halved

1/2 cup corn

1 medium avocado, diced

2 tablespoons toasted unsalted pumpkin seeds


Toss all ingredients together and enjoy! Other delicious ingredients to try in this salad: jicama, roasted vegetables (like sweet potatoes or cauliflower), black beans, tart apples, unsalted sunflower seeds, the list is endless!
